Bar e Saghir ke har hisse aur har quam mein dalon ko bataur ghiza khane ka riwaj hai. Baz qaumon ki to makhsos ghiza hi dalein hain, kai kism ki dalon mein gehun se 4 guna ziyada ajza e lahmayat aur aksar mein vitamins bhi hote hain. In mein jism ko barhane wale khoon(blood) aur gosht banane wale ajza (protein) kafi miqdar mein hote hain. Gosht aur sabziyon ke muqable mein dalon mein namkiyat ziyadah hote hain, dalon mein phosphorus acid aur magnesia nisbatan kam hota hai. Roghani ghizai ajza ki miqdar bhi thori hoti hai.

Aam taur par dalon ko dho kar aur chilka uthar kar pakaya jata hai lekin is tarah vitamins zaya ho jate hain. Dalon ki taqat chilke mein poshidah hai lekin log dholi hoi aur chilka utri hoi dalein pasand karte hain. Dholi hoi dalon ka protein, vitamins aur madaniyat ka beshtar hissa zaya ho jata hai. Moth Ki Daal (Turkish Gram):

Moth ki daal garam khushk aur halki hoti hai, balgham k odor klarti hai, jism ke bare howae mawad ko khushk karti hia aur taqat bakhshti hai. Albata ye qabz aur aphara peda karti hai.

Arhar Ki Dal (Pigeon Pea or Red Gram):

Arhar ki dal mizaj ke etebar se garam aur khushk hai, taqat bakhshti hai aur balgham k odor karti hai. Peshab awar aur madr hez hai, dhania aur heng dal kar pakai jaye to har tabyat ke insan ko taqat bakhshti hai.

Chane Ki Dal (Split Bengal Gram):

Chane ki dal garam hai, khoon saf karti hai, bhook lagati hai aur peshab awar hai. Chane ki dal raat ko dodh mein bhigo kar subah ragar kar aur dodh kand mila kar pene se darij (mani) ke jumla amraz dor hote hain aur qowat e bah mein izafa hota hai. Lekin kamzor mede walon ke leye ye tarkib muzir hai.

Mash Ki Dal ( Split Black Gram):

Mash ki dal garam tar hai, balgham peda karti hai, khoon, goshtaur charbi barhati hai, uraton ke dodh mein izafa karti hai. Behad maqwi hai, darij ko garah aur ziyadah karti hai. Saqil aur qabiz hai.

Motapa, tar khansi aur dame ke bemaron ke leye muzir hai, jigar, badhaazmi aur qabz ke marizon ko bhi nuqsan pohanchti hai, ese zod hazim banane ke leye heng, sonth aur adrak dalna mufed hai.

Masoor Ki Daal (Red Lantils):

Masoor ki dal sehat (health) ke liye mufeed hai khun ke masoor ki dal garam khushk hai. Chilka utar dene se masoor ki dal ki garmi kam ho jati hai. Balgham chanti hai, sene aur phepre (lungs) ke amraz mein is ka patla shorba mufeed hai. Qadre qabz peda karti hai, is leye qabz aur bawasir ke marizon ko is se parhez karna chaheye. Peshab (urin) aur hez (periods) ki ziyadati ko rokti hai. Masoor dal ka rozana istemal purane ishal, pechish aur badi, bulghami bukhar mein faidah bakhsh hai. Ye fawaid ke etebar se aksar dalon se bhetar aur taqat bakhsh hai.
